Strawberry Tiramisu

A fresh twist on the classic Italian dessert, this Strawberry Tiramisu layers strawberry-soaked ladyfingers with a creamy Strawberry Glow yoghurt filling and fresh strawberries. It's an easy make-ahead dessert that's high in protein and perfect for sharing.
Ingredients
Strawberry Purée
- 200 g fresh strawberries
- ¼ cup water
Tiramisu
- 20 ladyfingers (savoiardi)
- 450 g full-fat plain Greek yoghurt
- 4 scoops Strawberry Glow Shake
- 1 tsp maple syrup
- 125 g fresh strawberries, sliced
- Desiccated coconut or cocoa powder, for dusting (optional)
Method
- Add the strawberries and water to a blender and blend until smooth to make the strawberry purée.
- In a medium bowl, combine the Greek yoghurt, Strawberry Glow Shake and maple syrup. Stir until smooth and well combined.
- Pour the strawberry purée into a shallow bowl. Dip 4 to 5 ladyfingers into the purée, allowing them to soak for a few seconds on each side until softened but not falling apart. Repeat with the remaining ladyfingers as needed.
- Arrange 10 soaked ladyfingers in a single layer over the base of a baking dish. Spread half of the yoghurt mixture evenly over the top.
- Repeat with the remaining soaked ladyfingers and the remaining yoghurt mixture.
- Top with the sliced fresh strawberries. Cover and refrigerate for at least 8 hours, or overnight, to allow the layers to set.
- Before serving, dust with desiccated coconut or cocoa powder, if desired. Slice and serve.
