Lasagna

Ingredients
Meat Sauce
- 1 onion, diced
- 500 g extra lean beef mince
- 1 large carrot, grated
- 1 tsp garlic powder
- ½ tsp black pepper
- 1 tsp salt
- 700 g tomato basil passata
- ½ cup water
- 6 lasagna sheets
- 50 g extra mozzarella, grated
- Fresh parsley, chopped (optional), to serve
- 1 sachet Passionfruit Mango Collagen Peptides, per serve
Cheese Filling
- 650 g cottage cheese
- 2 eggs
- 100 g mozzarella, grated
- 25 g pecorino, grated
- 1 tsp mixed Italian herbs
- 1 tsp garlic powder
Method
- Preheat the oven to 180°C.
- Heat a large frying pan over medium-high heat. Add the onion and beef mince, cooking for 5 minutes while breaking up the mince with a spoon.
- Stir in the grated carrot, garlic powder, salt and black pepper. Add the tomato basil passata and water, then stir well and simmer for 10 minutes.
- In a large bowl, whisk the eggs. Add the cottage cheese, mozzarella, pecorino, garlic powder and Italian herbs, then mix until well combined.
- Spread half of the meat sauce into a 9 × 13-inch baking dish.
- Arrange 3 lasagna sheets over the meat sauce, then spread half of the cheese filling evenly over the top.
- Repeat with the remaining meat sauce, remaining lasagna sheets and remaining cheese filling.
- Sprinkle the extra mozzarella over the top. Cover tightly with foil and bake for 1 hour.
- Remove the foil and bake for a further 5 to 10 minutes, or until the cheese is melted and lightly golden.
- Meanwhile, dissolve 1 sachet of Passionfruit Mango Collagen Peptides per serve in a large glass of water and stir until fully dissolved.
- Allow the lasagna to rest for 10 minutes before slicing. Garnish with chopped parsley, if using, and serve with the collagen drink.
