Healthy Anzac Cookies

Golden, chewy oat biscuits with coconut and a boost of collagen—lightly sweet, wholesome, and perfect for an easy snack.


Ingredients (makes 15 biscuits)

  • 1 cup wholemeal plain flour 

  • 1 cup rolled oats

  • 1 cup shredded coconut

  • 3 tbsp brown sugar

  • 2 tbsp Unflavoured Collagen Co Collagen Powder

  • 100g unsalted butter

  • 4 tbsp golden syrup 

  • 1 tsp baking soda (bicarbonate soda)

Directions

  1. Preheat oven to 180°C (160°C fan) and line baking trays with baking paper.

  2. In a large bowl, combine the flour, rolled oats, coconut, brown sugar, and collagen.

  3. In a small saucepan over medium heat, melt the butter with the golden syrup. Once it begins to bubble, add the baking soda and stir until dissolved (it will foam), then remove from heat.

  4. Pour the butter mixture into the dry ingredients and mix until fully combined.

  5. Scoop 1 tablespoon of mixture, roll into a ball, then flatten into a thin patty with the back of a fork. Make ~15 biscuits.

  6. Place on prepared trays about 2.5 cm apart and bake for 12 minutes for a chewy centre or 15 minutes for a crisp texture, until golden.

  7. Allow to cool on the tray for 5 minutes, then transfer to a wire rack to cool completely (they will firm up as they cool).
