Cinnamon Hot Cross Bun

Soft, fluffy hot cross buns with a nourishing twist, made using Cinnamon Glow Shake for a warmly spiced, protein-boosted take. Studded with sweet sultanas and finished with a glossy maple glaze, these buns are comforting, lightly sweet, and perfect fresh from the oven. A feel good treat to enjoy any time of day.

Makes 9

Ingredients:

  • 150ml milk, lukewarm
  • 4 tbsp sugar, divided
  • 1 tsp instant yeast
  • 1 small egg, whisked
  • 30g butter, melted
  • 250g plain flour
  • 40g cinnamon glow powder
  • Pinch salt
  • 1.5 tsp all spice
  • 1/2 cup sultanas/ raisins
  • About ~60g additional flour*

Crosses:

  • 2 tbsp plain flour
  • 1–2 tbsp water
  • Glaze:
  • 1/4 cup sugar-free maple syrup


Method:

  1. Mix 1 tbsp sugar into lukewarm milk, sprinkle over yeast, stir and let sit for 10 minutes until foamy.

  2. In a bowl, whisk melted butter and egg, then stir in the yeast mixture. Add all dry ingredients and mix to form a dough.

  3. Knead on a floured surface for 5–10 minutes until smooth and soft.

  4. Place in a greased bowl, cover, and let rise in a warm spot for 1 hour or until doubled.

  5. Divide into 9 balls, place on a lined tray close together, and proof for 30–45 minutes until golden and puffy.

  6. Preheat the oven to 200°C. Mix cross ingredients, pipe over buns, and bake for 15 minutes.

  7. Warm maple syrup, brush over hot buns, and serve.
