Makes 16 cookies

Ingredients:

  • ½ cup almond flour
  • 2 tbsp flaxseed meal
  • 2 scoops Collagen Co Glow Shake
  • ¼ cup plain flour (plus extra for rolling)
  • 1 small egg (or ½ large egg, beaten)
  • 1 ½ tbsp sugar-free maple syrup
  • 25 g butter, melted
  • 1 tbsp brown sugar (or coconut sugar)
  • 1 tsp cinnamon
  • ¼ tsp ginger (or ½ tsp if you like it spicy!)
  • ¼ tsp nutmeg
  • ½ tsp baking powder
  • Dash of warm water, if needed

Directions:

  1. Preheat oven to 160°C fan-forced. Line a baking tray with baking paper.
  2. In a mixing bowl, combine all dry ingredients (almond flour, flaxseed meal, Collagen Co Glow Shake, plain flour, spices, baking powder).
  3. Add wet ingredients (egg, melted butter, sugar-free maple syrup, brown sugar) and mix until a dough forms. Add a dash of warm water if the dough is too crumbly.
  4. Roll dough between two sheets of baking paper, lightly dusted with flour to prevent sticking.
  5. Cut into small gingerbread shapes (~16 cookies).
  6. Bake for 12–15 minutes, or until lightly golden around the edges. Keep an eye on them — ovens vary!

Optional: Decorate with frosting or icing (I used ready-to-go icing from Coles/Woolworths).
