Cajun Chicken Mac n Cheese

A high-protein twist on a comfort food classic. This Cajun Chicken Mac & Cheese combines tender seasoned chicken with a creamy, cheesy pasta sauce, finished with a crunchy tortilla topping for the perfect balance of flavour and texture. Served with a refreshing HydraGlow drink, it's a satisfying, macro-friendly meal that's packed with protein and easy to make.

Ingredients (1 serve)

Cajun Chicken

  • 120g chicken breast
  • 1 tsp Cajun seasoning
  • Salt and pepper, to taste
  • Olive oil spray

Mac & Cheese

  • 40g dry macaroni pasta (or high-protein pasta)
  • 20g light cream cheese
  • 0.5 tsp garlic
  • 1 tsp herbs
  • 35ml reduced-salt chicken stock
  • 20g light mozzarella, grated
  • 3g tortilla chips, crushed
  • ¼ tsp Cajun seasoning

To Serve

  • Fresh parsley, chopped

HydraGlow Drink

  • 1 serve HydraGlow (any flavour)
  • Water and ice, as directed

Method

  1. Season the chicken breast with Cajun seasoning, salt and pepper.
  2. Lightly spray with olive oil and air fry at 180°C for 15–18 minutes, or until cooked through. Allow to rest before slicing.
  3. Cook the macaroni according to packet instructions. Drain and set aside.
  4. In a small saucepan over medium heat, combine the garlic, cream cheese, herbs, chicken stock, most of the mozzarella, and the remaining Cajun seasoning. Stir until smooth and creamy.
  5. Add the cooked macaroni and stir until well coated in the sauce.
  6. Transfer to a serving bowl and top with the sliced Cajun chicken.
  7. Sprinkle over the remaining cheese and crushed tortilla chips.
  8. Place under a grill or in the air fryer for 1–2 minutes until the cheese is melted and golden.
  9. Finish with fresh parsley.
  10. Serve alongside a chilled glass of HydraGlow.
