BBQ Corn Ribs

Crispy, smoky, and a little bit cheeky — these BBQ corn ribs are the ultimate crowd-pleasing snack or side. With golden edges, a tangy-sweet yoghurt sauce, and a sprinkle of parmesan and chives, they’re bursting with flavour in every bite. Pair them with a chilled can of Beautiful Energy for the perfect balance of zest and refreshment.
Ingredients (Serves 4)
- 2 corn cobs
- 2 tbsp olive oil
- 1 tbsp BBQ seasoning
- ½ tsp salt
Sauce
- 2 tbsp Greek yoghurt (low-fat or regular)
- 2 tsp sriracha
- 2 tsp lime juice
- 1 tsp sugar or honey
- Pinch of salt
To Serve

10 g parmesan cheese, finely grated

Chopped chives

Method
- Preheat oven to 180 °C.
- Cut the corninto quarters lengthways.
- Season: In a bowl, mix olive oil, BBQ seasoning, and salt. Brush or toss the corn pieces evenly with the mixture.
- Bake: Arrange corn ribs on a lined baking tray and roast for 25–30 minutes, turning halfway, until golden and curled slightly.
- Prepare sauce: Combine yoghurt, sriracha, lime juice, sugar, and salt in a small bowl.
- Serve: Drizzle the sauce over baked corn ribs or serve it on the side. Top with parmesan and chives.
