Stuffed Peppers

Get into the spirit of fun (and flavour!) with these Halloween-inspired stuffed capsicums. Filled with savoury taco-seasoned beef and brown rice, then baked until tender and cheesy, they’re equal parts wholesome and playful. Serve them with a chilled Beautiful Energy Raspberry for a tasty boost that’s as vibrant as your spooky creation.
Ingredients (per serve):
- 1 yellow capsicum, medium
- 125 g cooked brown rice
- 1/4 onion, chopped
- 1/4 garlic clove (or 1 small clove), minced
- 125 g beef mince (assuming recipe is 500 g for 4 serves)
- 1/4 tsp taco seasoning (or to taste)
- 10 g cheese (to top; 40 g total divided by 4)

Method:
- Preheat oven to 180°C (350°F).
- Cut the capsicum to create a pumpkin face (eyes, nose, mouth) and remove seeds.
- In a pan, sauté the chopped onion and garlic until softened.
- Add the beef mince and taco seasoning; cook until browned and cooked through.
- Place open capsicums on a tray and stuff the capsicum with the beef mixture.
- Top with cheese and bake in the oven for 20 minutes, until the pepper is tender and the cheese is melted.
- Remove and place the “lid” back on. Serve with cooked rice and BE Raspberry on the side.
