Tuna Salad Cucumber Rolls

Ingredients (makes 1 serve)

  • 1 cucumber (peeled into strips)

  • Light cream cheese (2 tbsp for base)

  • Light cream cheese (1 tbsp for tuna mix)

  • 180g tuna (springwater)

  • 1 tbsp fresh coriander

  • 1 tbsp red onion

  • ½ tsp garlic powder

  • 1 tsp fresh lime juice

Method

  1. Prepare the cucumber: Using a vegetable peeler, slice the cucumber lengthwise into long, thin strips. Lay the strips slightly overlapping on paper towel.

  2. Make the tuna mix: In a bowl, combine the drained tuna with 1 tbsp of light cream cheese, coriander, red onion, garlic powder, and lime juice. Mix well until evenly combined.

  3. Assemble: Spread the remaining 2 tbsp of light cream cheese over the cucumber base to help it stick together. Spoon the tuna mix evenly over the cream cheese layer.

  4. Roll and slice: Carefully roll up the cucumber sheet into a log, starting from one short end. Slice into bite-sized rounds using a sharp knife.

  5. Serve immediately as a fresh, high-protein snack or light meal.
