    Raw Coconut Lemon Bars

    Not sure what to do with all the lemons from your lemon tree this year? Well, when life gives you lemons, make Collagen lemon bars! These raw, high protein bars are  a great Summer treat with all the benefits of Collagen for your hair, skin and nails. 

     

    No Bake | Gluten Free Friendly 

    Base

    1 cup almond meal

    ½ cup quick oats or quinoa flakes for GF

    1 cup desiccated coconut 

    ¼ cup maple syrup

    Zest of 1 lemon 

    3 tbsp water 


    Lemon cream:

    4 scoops Unflavoured Premium Collagen Peptides

    ½ cup cashew butter

    ⅓ cup melted coconut butter

    ¼ cup maple syrup

    ⅓ cup fresh lemon juice

    1 tsp vanilla extract

    2 tbsp water 

    2 tablespoons desiccated coconut (to top)


    Method:

    1. Line a square baking tin with baking paper.
    2. To make the crust, combine the almond meal, oats, coconut, maple syrup, lemon zest and water in a large bowl to form a dough. Press into the prepared pan.
    3. In a medium bowl mix the collagen, cashew butter, coconut butter, maple syrup, lemon, vanilla and water. Stir well to form a “cream”.
    4. Pour the lemon cream over the base then garnish with the extra coconut.
    5. Refrigerate for 3 hours or overnight to firm up. Slice into 18 bars and enjoy!
