Pepper Steak & Rice

Ingredients (Serves 4)

  • 500g beef steak, thinly sliced
  • 1 onion, sliced
  • ½ red capsicum, sliced
  • ½ green capsicum, sliced
  • ½ yellow capsicum, sliced
  • 2 tsp soy sauce (for marinating beef)
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • Salt + pepper, to taste

Glaze (for 500g beef)

  • 60ml soy sauce (4 tbsp)
  • 80ml water (⅓ cup)
  • 1 tbsp rice wine vinegar
  • 1 tsp garlic, minced
  • 1 tsp ginger, minced
  • Plenty of cracked black pepper
  • 1 tbsp brown sugar
  • 2 tsp cornflour + 2 tbsp water (slurry)

To serve

  • 4 cups (600g) cooked white rice

Method:

  1. Marinate sliced beef with soy sauce, garlic powder, onion powder, salt and pepper.
  2. Heat a pan on medium-high, cook beef until browned, then set aside.
  3. In the same pan, sauté onion and capsicums until softened.
  4. Return beef to the pan, add glaze ingredients, and stir well.
  5. Add cornflour slurry, simmer until sauce thickens and coats beef + veggies.
  6. Serve hot over rice with BE energy on the side.
