Pepper Steak & Rice

Ingredients (Serves 4)
- 500g beef steak, thinly sliced
- 1 onion, sliced
- ½ red capsicum, sliced
- ½ green capsicum, sliced
- ½ yellow capsicum, sliced
- 2 tsp soy sauce (for marinating beef)
- 2 tsp garlic powder
- 2 tsp onion powder
- Salt + pepper, to taste
Glaze (for 500g beef)
- 60ml soy sauce (4 tbsp)
- 80ml water (⅓ cup)
- 1 tbsp rice wine vinegar
- 1 tsp garlic, minced
- 1 tsp ginger, minced
- Plenty of cracked black pepper
- 1 tbsp brown sugar
- 2 tsp cornflour + 2 tbsp water (slurry)
To serve

4 cups (600g) cooked white rice
Method:
- Marinate sliced beef with soy sauce, garlic powder, onion powder, salt and pepper.
- Heat a pan on medium-high, cook beef until browned, then set aside.
- In the same pan, sauté onion and capsicums until softened.
- Return beef to the pan, add glaze ingredients, and stir well.
- Add cornflour slurry, simmer until sauce thickens and coats beef + veggies.
- Serve hot over rice with BE energy on the side.
