Birria Tacos

These Birria-inspired tacos are rich, cheesy, and irresistibly flavourful. Tender shredded beef is seasoned to perfection, folded into crisp golden tortillas, and topped with fresh coriander and diced onion for the ultimate comfort meal. Pair with a glass of Super Beauty Greens and a drizzle of extra chipotle sauce for a deliciously satisfying serve.

Ingredients
- 350g beef rump steaks
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 cup chipotle in adobo sauce
- 3 tbsp white vinegar
- 4 small tortillas
- 1 cup grated cheese
- To garnish: fresh coriander, diced brown onion
- 4 serves Super Beauty Greens powder
Method

In a bowl, add the steaks and coat with the onion powder, garlic powder, oregano, and salt. Massage the seasoning into the meat with your hands.

Heat a non-stick pot over medium heat and cook the steak for 4 minutes on one side. Flip, cover with a lid, and cook on medium-low for 15 minutes.

Remove from heat and let rest for 10 minutes. Slice the steak along the grain so it flakes apart. Pour over a few tablespoons of the cooking juices and toss to combine.

Heat a pan over medium heat. Add a tortilla, sprinkle half with cheese, then top with about 1/2 cup of the shredded beef. Add more cheese on top, fold the tortilla in half, and press gently. Flip to toast the other side until golden and the cheese has melted.

Repeat with remaining tortillas and beef.

Mix one serve of Super Beauty Greens into each glass of water and stir to dissolve.

Serve the quesadillas topped with coriander and diced onion, and enjoy with extra chipotle sauce for dipping.
