2 cups quick oats
1/4 cup flaxseeds
8 medjool dates
1/2 cup almond butter
1/2 tsp cinnamon
1/4 cup water, to blend
1 cup plain greek yoghurt or coconut yoghurt
1 cup roughly diced berries
2 scoops Immunity Collagen Peptides
Orange zest (optional)
- To make the base add everything to a food processor and blend until a dough forms. Add extra water if needed to help bind.
- Press the dough into a lined square baking pan.
- In a medium bowl, combine the yoghurt, berries and collagen.
- Spread over the base and garnish with orange zest then freeze for 3 hours or until firm.
- Cut into pieces and serve immediately or store in the freezer for up to 1 week.
